Time Lapse Hot Sauce
I started Gardening this last summer, being outside and watching the plants grow was something I needed in my busy world. As the plants grew I began to think about harvest time and what I was going to do with all the produce. I began collecting recipes and helpful hints from friends, neighbors, UTUBE, or anywhere else. I taught myself how to can, how to dehydrate, smoke, pickle and ferment the vegetables I grew.
One thing I have always wanted to do is create my own hot sauce, crafted just the way I liked it. Hot but not too hot, made with out a very vinegar tasting base. I wanted to create an every day type hot sauce that was good on many different type of meals.
I started by fermenting the peppers in salt water and a few pickling spices being careful to burp the jars everyday for 10 days. I then blended the fermented peppers with other spices and cooked the mash until it simmered together all the flavors and killed the fermentation process. then I bottled my new amazing hot sauce.
Through out this process I documented each step with photos. then after bumping up the saturation on Photoshop I arranged the photos on illustrator.
The hot sauce turned out better than I could hope for my first time, and will continue to get better after each new batch.
